2 Pounds (32 Ounces) Lean Ground Beef or Turkey.
1 Can (538g) Enchilada Sauce.
1 Can (794g) Crushed or Diced Tomatoes.
1 Can (127g) Chopped Green Chile Peppers.
1 Chopped Yellow Onion.
1 Package (10 Ounces) Frozen Corn.
Some Cilantro.
1 Can (439g) Drained & Rinsed Black Beans (Low Sodium Preferred).
2 Teaspoons Minced Garlic.
1 Teaspoon Ground Cumin.
1 1/2 Teaspoons Chili Powder.
Salt & Pepper.
1-2 Bay Leaves.
4 Cups (32 Ounces) Pacific Foods Organic Bone Broth.
Tortilla Strips.
TIPS: Make your own tortilla strips by brushing some corn tortillas with oil and baking them until crisp!
It tastes great cold!
How to make:
1. Brown your Beef or Turkey.
2. Add all of your ingredients into your optionally lined slow cooker.
3. Mix everything together.
4. Cook it on low for 7-8 hours or high for 3-4 hours.

1 Tablespoon avocado oil (My favorite brand on Amazon https://amzn.to/2pG05g3 (affiliate link).
1/2 Onion, chopped.
2 Garlic cloves, minced.
2 Chicken Breast, cut into bite sized pieces.
3 teaspoons chili powder.
2 1/2 teaspoons Cumin.
2 Cups Low sodium chicken broth.
1 Cup Enchilada Sauce.
1 teaspoon xanthan gum (My favorite brand on Amazon http://amzn.to/2FMWPW7 (affiliate link).
salt and pepper to taste.
1 Cup shredded Monterey Jack cheese.
1 Cup shredded cheddar cheese.
Instructions.
Heat avocado oil in a large pot (my favorite brand on Amazon https://amzn.to/32lvaI5 (affiliate link) over medium heat..
Add in the onion, garlic, spices and chicken..
Cook until the chicken is cooked through (about 8 minutes)..
Pour in the enchilada sauce and chicken broth..
Whisk in the xanthan gum and bring to a boil to thicken..
Remove from the heat and season with salt and pepper to taste..
Serve in bowls with lot’s of cheese..
JENNIFER’S TIPS.
Enchilada Sauce: Find one that has little to no sugar.
I like to add the cheese to the individual bowls because I find that if it is added to the whole pot, it sinks to the bottom and becomes a melted glob on the bottom of the pot..

• 4 cups chicken broth.

• 7 ounce can diced green chiles.
• 1 1/2 cups frozen corn (or use canned).

• 3 cups tortilla strips or tortilla chips.
• 2 medium avocados, diced.
